Mediterranean Chicken

1lb boneless chicken breast

Marinade:

1/3 c extra virgin olive oil

3 Tbsp red wine vinegar

1 Tbsp chopped sun dried tomatoes

1 tsp mediterranean oregano (or plain oregano works fine too)

1 tsp garlic powder

1 tsp. salt

1 tsp. lemon pepper


Mediterranean Spice Rub:

2 tsp. dried oregano

1.5 tsp. onion powder

1 tsp cornstarch

1 tsp black pepper

1 cube/ 1 tsp. veg bullion, powdered

1 tsp. dried parsley

1 tsp. dried thyme

1/2 tsp. dried marjoram

1/2 tsp. cinnamon

1/2 tsp. nutmeg


Put chicken in glass dish. Add all ingredients from marinade and mix. Refigerate overnight, or at least a few hrs. Mix all of the spice rub ingredients. Remove chicken from marinade and cover both sides with rub. Grill or bake in oven at 425 degrees for 25 min. If having veggies with dinner, toss steamed veggies in olive oil and sprinkle with remaining spice rub.
